Sausages with Mashed Potatoes

Another yummy dish I prepared – got the basic recipe from the net – modified to suit “Indian conditions”
Ingredients
- 8 meaty pork sausages
- English mustard to serve
- For the gravy:
- 700 g onions, sliced thinly
- 1 pinch sugar
- 2 tablespoons oil
- 25 g butter
- 1 teaspoon plain flour
- 600 ml brown ale
- 600 ml fresh beef stock
- 1/2 star anise
- 2 cloves
- 2 fresh bay leaves
- 900 g floury main crop potatoes,, peeled and cut into chunks
- 55 g butter
- 2-3 tablespoons milk
- salt and freshly ground black pepper
Potato & Meatball Caserrole with Garlic Bread

I’m back at it – here’s something I just put together today, it was absolutely yummy – even if I say so myself 🙂
Ingredients
4 cups Mashed Potatoes
6 Meatballs, Can use frozen meatballs
1 cup Cheddar Cheese, shredded
2 tablespoons Pasta Sauce
1 teaspoon Olive oil
1 teaspoon Paprika
1 teaspoon basil
1 teaspoon oregano, (Can use one sachet that comes with Pizza)
For Garlic Bread
5 slices bread
2 tablespoons butter
1 teaspoon garlic, minced
Directions
For Potato Casserole:
1. Shallow Fry the meatballs
2. In a casserole dish, make a bed of mashed potatoes
3. Put in the fried meatballs – should be half inside the potatoes
4. Cover with pasta sauce, paprika and basil
5. Cover with cheese and oregano
6. Bake at 180 C for 12-15 minutes – until cheese starts to turn brown.
For Garlic Bread:
1. Melt the butter with garlic in a microwave
2. Butter one side of the bread slices
3. Bake at 180 C for 2-4 minutes

Note:
Mashed Potatoes can be made conventionally by boiling potatoes, mashing with cream and butter
I prefer to use potato flakes (called Aloo Mash in India), with butter, little bit of milk, salt and pepper and heating in a microwave
Two eggs can be added to the casserole before baking to add to the flavour.
Baked Potatoes – Masala Style

Ingredients:
- 8 baby potatoes
- 1 large onion, chopped
- 1 tablespoon oil
- 1 teaspoon jeera
- 2 teaspoons ginger-garlic paste
- 1 tablespoon tomato puree
- ½ teaspoon turmeric
- 1 teaspoon garam masala
- ½ teaspoon red chilli powder
- Salt to taste
- Cheddar Cheese
Directions:
1. Steam baby potatoes in microwave steamer for 7 minutes
2. Heat the oil in an open pan
3. Add jeera and wait till it starts to crackle
4. Add onions, ginger-garlic paste, turmeric, red chilly and cook on low flame till onions turn soft and light brown
5. Add tomato puree and heat for a couple of minutes
6. Add baby potatoes and heat for another couple of minutes
7. Transfer to microwave safe plate, sprinkle cheese and microwave for 2 minutes
Enjoy with garlic bread.
